
Case File 41 is a natural processed coffee from the Kintamani highlands of Bali. Coffees from this region are not something you see very often, which is exactly why this one stood out to me.
Typically, I gravitate toward washed coffees. I love clarity, structure, and clean acidity. But this coffee reminded me why natural processed coffees were what first pulled me into specialty coffee in the early days. They were the coffees that made me slow down, pay attention, and realize how expressive coffee could be.
In the cup, this coffee is extremely complex, juicy, and aromatic. You’ll find bright citrus and mango up front, followed by grapefruit acidity that keeps it lively. As it develops, chocolate adds depth and balance, and it finishes with a very unique pine-like note that lingers in a way that’s unexpected but really enjoyable.
This is not an over-the-top or overly funky natural. It’s balanced, nuanced, and shows how beautiful a dry natural can be when it’s done thoughtfully. Each sip reveals something a little different as the coffee cools.
I’m genuinely excited to share this coffee with our Co-Conspirators. It’s a reminder of why I fell in love with specialty coffee in the first place and why I’m always open to being surprised by a cup that challenges my usual preferences.
